Description
Angel Bake Earl Grey Extract is part of Saena’s Culinary Aromatics collection, a line of water soluble botanical extracts carried in organic cane sugar ethanol with no added water. This one is a composed Earl Grey profile rather than a tea extract: bergamot leads, sweet orange rounds the citrus, and lavender carries the floral finish. Because it is water soluble it disperses cleanly into anything with water in it, which puts it in tea lattes, cocktail syrups, macaron fillings, pastry cream, and frozen dessert bases with equal ease.
Earl Grey without the brew
Earl Grey is a bergamot profile before it is anything else, and that is where this extract starts. Citrus bergamia carries the bright, faintly bitter citrus top note that makes the style recognizable at the first sip.
Sweet orange sits underneath the bergamot and rounds the citrus so it reads warm rather than sharp. Lavender finishes it with the soft floral note people associate with a well made Earl Grey, at a proportion low enough that it reads as depth rather than as lavender.
Because the profile is composed rather than steeped, it repeats. Brewing gives you a different answer depending on leaf lot, water temperature, and contact time. This does not.
Flavor and aroma
On the nose it opens bergamot forward: bright, faintly bitter, unmistakably Earl Grey. Sweet orange fills in behind it and takes the hard edge off the citrus, and the lavender arrives last as a soft floral close rather than a soapy one, which is the usual failure mode of floral work.
The balance is built to survive dilution. In a syrup, a pastry cream, or a latte it stays legible instead of flattening into generic citrus, and it holds its shape against dairy, sugar, and acid.
No tea in the bottle, and no caffeine
There is no tea solid in this formula, so there is no caffeine. For a bakery that matters on evening desserts and on menus written for children. For a beverage producer it removes a declaration to manage and takes the tea supply chain out of your specification.
It also means you are not carrying tannin into the base. Tannin is what turns a brewed infusion bitter and cloudy once it sits in a syrup or a cream, and it is the reason steeped Earl Grey rarely holds up in production.
What we don’t have matters
Culinary Aromatics extracts are built on four statements a quality reviewer can check against a specification sheet rather than on adjectives. Every Culinary Aromatics product is made without:
- Synthetic or artificial flavor ingredients
- Propylene glycol, the carrier most of the flavor industry uses
- Added water. Food grade ethanol carries residual water, and stating it that way is the accurate version
- Added sugar
- Synthetic colors or dyes
- BHT or sodium benzoate
- Caffeine
Production runs in a dedicated gluten-free, allergen-free facility, which means none of the major food allergens are present in the production environment, not simply absent from the formulation. That is the assurance manufacturers supplying allergen-sensitive retail and foodservice channels are asked to provide.
Why organic cane sugar ethanol? The carrier makes the difference
Culinary Aromatics extracts are carried in organic cane sugar ethanol with no added water. Because the carrier is water soluble, the extract disperses into a water phase cleanly instead of beading on the surface of a syrup or breaking a curd, which is what happens when an oil borne flavor is pushed into a water based system.
There is a food safety consequence as well. At the concentration Culinary Aromatics is formulated to, the product does not support microbial growth, which is why the microbiological section of the COA reads not applicable across the panel. It does not clean up a microbial load already present in your base, and we will not claim that it does.
